Ingredients:
- 2 ripe bananas, mashed
- 1 cup fresh strawberries, diced
- 2 cups gluten-free all-purpose flour
- 1/2 cup almond flour
- 1/2 cup coconut sugar
- 1/4 cup honey
- 1/4 cup unsweetened applesauce
- 2 large eggs
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
Instructions:
Preheat your oven to 350F 175C
Grease a 9x5-inch loaf pan and line it with parchment paper for easy removal
In a large mixing bowl, combine the mashed bananas, diced strawberries, coconut sugar, honey, applesauce, eggs, melted coconut oil, and vanilla extract
Mix well
In a separate bowl, whisk together the gluten-free all-purpose flour, almond flour, baking soda, baking powder, salt, and ground cinnamon
Slowly add the dry ingredients to the wet ingredients, stirring until well combined
Pour the batter into the prepared loaf pan and spread it evenly
Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean
Remove the banana bread from the oven and allow it to cool in the pan for 10 minutes
Then, transfer it to a wire rack to cool completely
Once cooled, slice and enjoy your delicious gluten-free strawberry banana bread!
