Ingredients:
- 2 chicken breasts, diced
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 250g penne pasta, cooked al dente
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Add the diced chicken to a bowl and mix it with the Cajun seasoning until it is well covered
Put olive oil in a big skillet and heat it over medium-high heat
After you add the chicken, cook for about 5 to 6 minutes, until it turns brown and is fully cooked
Take the chicken out of the pan and set it aside
Put sliced onion and bell peppers in the same pan
For about 4 to 5 minutes, cook until soft
After you add the minced garlic, cook for one more minute
Add chicken broth and heavy cream
Bring to a low boil
Add grated Parmesan cheese and mix it in until it melts and is smooth
Put the chicken and pasta back in the pan after they are done cooking
Toss until the creamy sauce covers everything well
Add pepper and salt to taste
Before serving, sprinkle with fresh parsley
