Crustless Mini Quiches



These mini quiches don't have a crust, so they're great for breakfast or brunch and are easy to make. They taste great because they are full of ham, cheese, and vegetables. It's great for making ahead of time or for a quick breakfast on the go.

Ingredients:

  • 6 large eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced ham
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Cooking spray

Instructions:

Preheat your oven to 350F 175C

In a mixing bowl, whisk together the eggs and milk until well combined

Stir in the shredded cheddar cheese, diced ham, bell peppers, and onions into the egg mixture

Season the mixture with salt and pepper to taste

Grease a muffin tin with cooking spray to prevent sticking

Pour the egg mixture evenly into each muffin cup, filling them about 3/4 full

Bake in the preheated oven for 18-20 minutes, or until the quiches are set and slightly golden on top

Remove the mini quiches from the oven and let them cool for a few minutes

Use a butter knife to gently loosen the edges and remove the quiches from the muffin tin

Serve hot or at room temperature, and enjoy!
